Mini Peanut Butter and Dark Chocolate Sandwich Cookies
Have you ever had a peanut butter sandwich cookie? Well get very very excited cause they are so delicious!!
Now this is how mini…
and since my hands are extremely small they are pretty mini
So start out with mini peanut butter cookies…
1 stick (8 tablespoons) unsalted butter
3/4 cup crunchy peanut butter
1/2 cup granulated sugar
1/2 cup packed dark-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
3/4 teaspoon baking soda
mix the wet, then the dry, and then mix together. Now bake time can differ but keep an eye on these guys cause they are small, so they cook quickly. Take them out once they start to brown on top
Now for the yummy middle… this is something you can play around with…just keep tasting till its how you like it, but here is a guide line
1/2 cup creamy peanut butter
3 cups powdered sugar
1 tsp Vanilla
5 tbsp milk
Just make sure its creamy…
now sandwich those tasty little cookies (after they have cooled of course)…. and lastly its time to do a little dipping. Just melt some good ole dark chocolate, dip 1/2, chill and then EAT!
