CHOCOLATE: COOKIES WITH EASTER M&M’S

When we were living in Spain for a few months we made an awesome friend.  He was doing SO much for us while we were staying there, that we wanted to do a little something for him.  I had the idea I should make him some American cookies.  For some random reason, that I don’t remember, I wanted to make THESE cookies.  It ended up being SO much harder than I thought.  Finding American ingredients in Spain was near to impossible. We could not find brown sugar (gasp). Also no white chocolate chips, and finding vanilla turned into a crazy quest.  But when we finished running around to 10 different stores, we seemed to round up an ok amount of ingredients.  They turned out extremely gooey and weird due to a lack in some main ingredients but our friend LOVED them!  ha ha he still talks about those cookies.
Actually when we left northern Spain and went to Madrid they had an “American” store where I was able to find more ingredients.  Including other things like recess cups, skittles, peanut butter (yes I think I would die if I lived somewhere without peanut butter ha ha just kidding….but really)
Because of that interesting cookie experience I have a special place in my heart for these chocolate cookies with white chocolate chips.  It just reminds me of how much we LOVED spain and the amazing friends we met.
 I did change it up this time and added some yummy white chocolate M&M’s…and I must say they sure were a GREAT addition!
Recipe:
1 cup brown sugar 
1/2 cup sugar
2 sticks unsalted, softened butter
2 teaspoons vanilla extract
2 eggs
………Mix all these wet ingredients together……..
 
2 cups flour
2/3 cup coco powder
1 teaspoon salt
1/2 teaspoon baking soda
………Mix all these dry ingredients together………
slowly add the flour mixture to the wet ingredients
the dough will be pretty sticky and gooey by the time you are done mixing it.
Then pour in ALMOST an entire bag of white chocolate M&M’s
save a few to stick into the top of the cookies so you can see them.
 This is all for the looks…because come on people lets face it, you want the cookies to taste AND look good.
Lastly cook at 350 degrees for about 6-8 min depending on your oven.  Just take them out when they are still a little gooey
and then lets end with this…
