Gotta add the chocolate! It seriously makes it unbelievable.
Cake Ingredients:
1 ½ cups Bananas mashed (mashed real good)
2 teaspoons lemon juice (the real thing)
3 cups flour
1 ½ teaspoons baking soda
½ teaspoon salt
¾ cup butter
2 cups sugar
3 large eggs
2 teaspoons vanilla
1 1/2 cups milk (or buttermilk, but I used just regular)
Preheat oven to 275. Grease two round cake pans
In a small bowl mash bananas, then squeeze in some lemon juice
In a bowl mix together flour, baking soda and salt
In a larger bowl cream butter and sugar . Beat in eggs one at a time. Then add vanilla. Mix in flour mixture and then add milk
Lastly stir in Banana mixture
Pour batter in pans and then….wait! Now the cook time is strange(and because I made this in New Zealand and their ovens are weird) and could vary but about an hour 1/2….or until the toothpick inserted in center comes out clean
Let cool and then put straight away in the fridge to cool.
Now onto the FROSTING!! YUM….I just love love love cream cheese frosting!
½ cup butter (soft)
8 ounces cream cheese (soft-I used low fat)
1 teaspoon vanilla
2 cups powdered sugar
(you can go crazy or not with the sugar…depends on how sweet you want the frosting….its up to you!)
Beat together butter and cream cheese, then add in vanilla. And lastly mix in the powdered sugar.
Then spread it onto your nice and chilled cake!
BRING ON THE CHOCOLATE.
I just bought a bar of Dark chocolate and grated it (with the largest grater) until I had enough to cover the whole cake. All I did was sprinkle it on the top and use a large knife to push the chocolate flakes onto the frosting making it stick And WHALA!!
You have one tasty delicious banana cake!! Enjoy :)
